5 Course Pork + Wine Dinner
On Thursday, September 21st at 6pm, Chef Matt Koza and Chef Jazmine will prepare five Pork Dishes with perfectly paired Wines. Michael Giustiniani, wine expert, will be presenting Tasting Notes, Vineyard History, and Culinary Education. Wine offered throughout the evening will be for sale at the end of the event.
1st Course – Sparkling Rose paired with Crispy Cracklin, served with Hot Honey and a Pickled Vegetable Medley and Zaatar.
2nd Course – Riesling paired with Pork Rillettes, Frisée & Pickled Pear Salad with Gruyere, Honey Orange Dressing, and Crispy Pig Ear, all on top of House-Baked Focaccia bread.
3rd Course – Brunello paired with Porchetta with Mole Sauce, Pickled Mustard Seed, Cotija Cheese, and a Shiso Salad.
4th Course – Pinot Noir paired with Pork Steam Ships served table-side with Saffron Bean Mouse, Hazelnut Picada, Fig, and a Red Wine Reduction.
5th Course – Cherry Dessert Wine paired with Stuffed French Toast Cheesecake – Pastry Cream, Candied Bacon, topped with Bourbon Maple Ice Cream
